Half a cup of vinegar

10 cups of clean water

Submerge the leaves for 10 to 15 minutes. This helps remove dirt, insects and surface contaminants. Rinse well with fresh water and drain before chopping.

Curried Dandelion Leaves with Chickpeas

Ingredients

2 cups fresh young dandelion leaves, soaked, rinsed and roughly chopped

1 can chickpeas, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh grated ginger

1 tablespoon olive oil or coconut oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

1 teaspoon curry powder

Half teaspoon paprika

Pinch of chili flakes, optional

1 cup chopped tomatoes or passata

Half cup coconut milk or vegetable broth

Salt and black pepper to taste

Juice of half a lemon

Optional

Fresh coriander to garnish

Toasted cumin seeds for finishing

Method

1. Heat the oil in a pan over medium heat. Add the onion and cook until soft and lightly golden.

2. Add garlic and ginger. Stir for about one minute until fragrant.

3. Add cumin, coriander, turmeric, curry powder, paprika and chili flakes. Stir gently for 30 seconds to activate the spices.

4. Add chopped tomatoes and simmer for 5 minutes until slightly thickened.

5. Stir in chickpeas and coconut milk or broth. Simmer gently for 8 to 10 minutes.

6. Add the chopped dandelion leaves. They will wilt quickly. Cook for another 5 minutes until tender.

7. Season with salt and black pepper. Finish with fresh lemon juice to balance the natural bitterness.

Serve warm with black rice, quinoa or healthy flatbread.
